THE TEA

We use organic whole leaf Assam tea produced by a co-operative of 6 small scale tea growers in India. They harvest the finest Assam tea and in turn are paid fairly helping to bring sustainability to their rural community.

THE SCOBY

Clever Kombucha is created by combining organic tea, organic cane sugar and a SCOBY (Symbiotic Culture Of Bacteria and Yeast). A SCOBY is the living home for the good bacteria and yeast that transform sweet tea into tangy, naturally fizzy kombucha.

THE OAK

Clever Kombucha is fermented in custom made oak barrels. Although labour intensive this results in a healthy kombucha with a depth of flavour that is impossible to replicate using the industry standard stainless steel fermenters.

THE KOMBUCHA

Our kombucha is brewed with black tea creating a bold and complex flavour with notes of apple. We second ferment with in-house cold pressed juice and herbs resulting in a natural fizz.

Clever Kombucha is available in Original Oak, Ginger Pear, Watermelon Mint and Peach Lavender.
